Description

Delicious stuffed zucchini blossoms, perfect as an appetizer or snack.


Ingredients

  • 12 zucchini blossoms (fresh and cleaned)
  • 1 cup ricotta cheese (whole milk)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh basil (chopped)
  • 1 clove garlic (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 cup sparkling water (cold)
  • 1 teaspoon salt
  • 2 cups vegetable oil (for frying)

Instructions

  1. In a mixing bowl, combine ricotta cheese, Parmesan cheese, basil, garlic, salt, and pepper. Mix until well combined.
  2. Gently open each zucchini blossom and spoon about 1-2 tablespoons of the filling into each blossom. Twist the ends to seal.
  3. In a separate bowl, whisk together flour, sparkling water, and salt until smooth.
  4. Heat vegetable oil in a frying pan over medium-high heat. Dip each stuffed blossom into the batter, allowing excess to drip off, and carefully place in the hot oil.
  5. Fry for about 2-3 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.
  6. Serve warm as an appetizer or snack, optionally with marinara sauce for dipping.
