- 12 zucchini blossoms (fresh and cleaned)
- 1 cup ricotta cheese (whole milk)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh basil (chopped)
- 1 clove garlic (minced)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup all-purpose flour
- 1 cup sparkling water (cold)
- 1 teaspoon salt
- 2 cups vegetable oil (for frying)
Instructions
- In a mixing bowl, combine ricotta cheese, Parmesan cheese, basil, garlic, salt, and pepper. Mix until well combined.
- Gently open each zucchini blossom and spoon about 1-2 tablespoons of the filling into each blossom. Twist the ends to seal.
- In a separate bowl, whisk together flour, sparkling water, and salt until smooth.
- Heat vegetable oil in a frying pan over medium-high heat. Dip each stuffed blossom into the batter, allowing excess to drip off, and carefully place in the hot oil.
- Fry for about 2-3 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.
- Serve warm as an appetizer or snack, optionally with marinara sauce for dipping.
