- 2 large eggs
- 2/3 cup granulated sugar
- 1/2 cup water
- 1 tablespoon honey
- 1 teaspoon baking powder
- Sweet red bean paste (anko)

- In a mixing bowl, whisk the eggs and sugar until the mixture is light and fluffy.
- Add honey and water, mixing well until combined.
- Sift the flour and baking powder into the wet ingredients, stirring gently until smooth. Be careful not to overmix.
- Let the batter rest for about 30 minutes to thicken.

Cook the Pancakes:
- Heat a non-stick pan over medium-low heat and lightly oil it with a paper towel.
- Pour a small amount of batter (about 2 tablespoons) into the pan to form a round pancake.
- Cook until bubbles form on the surface, then flip to cook the other side until golden brown. Each side should take about 1-2 minutes.
- Transfer to a plate and cover with a damp cloth to retain softness.

Assemble the Dorayaki:
- Take one pancake and spread a generous spoonful of red bean paste in the center.
- Top with a second pancake and gently press the edges to seal.

- Ensure the batter rests adequately to achieve a fluffy texture.
- Adjust the heat as needed; if the pancakes brown too quickly, lower the heat.
- For an alternative filling, try using whipped cream or chocolate spread.
