This delightful layered dessert features sago, matcha, and strawberries, perfect for any occasion.


Ingredients

  • ½ cup small tapioca pearls (sago)
  • Water, for boiling
  • Cold water, for rinsing
  • 1 ½ tsp culinary-grade matcha powder
  • 2 tbsp hot water (about 175°F)
  • ½ cup whole milk or oat milk
  • 2 tbsp condensed milk (or to taste)
  • 1 cup fresh strawberries, chopped
  • 2 tbsp granulated sugar
  • ½ cup whole milk or oat milk
  • 2 tbsp condensed milk
  • Toppings (optional): Sliced strawberries, Extra sago pearls, Whipped cream or coconut cream

Instructions

  1. Cook the Sago: Bring a pot of water to a rolling boil, then add the sago pearls. Stir gently to prevent sticking. Cook for about 15 minutes until the pearls turn mostly translucent with a tiny white dot in the center. Turn off the heat and cover the pot. Let the sago sit for another 10-15 minutes until fully translucent. Drain the cooked sago using a fine mesh strainer and rinse with cold water to remove excess starch. Set aside to chill.
  2. Prepare the Matcha Layer: In a small bowl, whisk the matcha powder with hot water until smooth and no clumps remain. Add condensed milk and your milk of choice, stirring to combine. Taste and adjust sweetness. Keep chilled.
  3. Make the Strawberry Layer: In a blender, combine chopped strawberries, sugar, milk, and condensed milk. Blend until smooth. If you prefer a chunkier texture, pulse a few times instead of blending fully.
  4. Assemble the Dessert: In a serving glass or jar, layer the sago at the bottom. Next, pour in the strawberry milk mixture, then gently spoon the matcha layer on top. The layers may swirl a bit—and that’s perfectly beautiful. Top with fresh strawberries or whipped cream if desired. Serve immediately for the best texture and color.
