A delicious and easy ground turkey and rice dish that is both healthy and flavorful.
Ingredients

- 1 lb lean ground turkey
- 1 cup long-grain rice
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup bell peppers (any color), chopped
- 3 tbsp low-sodium soy sauce
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Rinse the rice under cold water until clear. In a saucepan, combine rice with 2 cups water; bring to a boil. Lower the heat, cover, and simmer for 15-20 minutes until water is absorbed.
- In a skillet over medium heat, heat olive oil. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and chopped bell peppers; cook until soft (another 5 minutes).
- Add ground turkey to the skillet; cook until browned and no longer pink (7-8 minutes).
- Season with cumin, paprika, salt, and pepper. Pour in soy sauce; stir well and let simmer for an additional 5 minutes.
- Fluff cooked rice with a fork and mix it into the turkey mixture thoroughly.
- Serve warm, garnished with extra soy sauce or fresh herbs if desired.

- This dish can be served with a side salad for a complete meal.
- Feel free to add other vegetables such as peas or corn for extra nutrition.
