Description

Ingredients

  • 1 lb lean ground turkey
  • 1 cup long-grain rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers (any color), chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse the rice under cold water until clear. In a saucepan, combine rice with 2 cups water; bring to a boil. Lower the heat, cover, and simmer for 15-20 minutes until water is absorbed.
  2. In a skillet over medium heat, heat olive oil. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and chopped bell peppers; cook until soft (another 5 minutes).
  3. Add ground turkey to the skillet; cook until browned and no longer pink (7-8 minutes).
  4. Season with cumin, paprika, salt, and pepper. Pour in soy sauce; stir well and let simmer for an additional 5 minutes.
  5. Fluff cooked rice with a fork and mix it into the turkey mixture thoroughly.
  6. Serve warm, garnished with extra soy sauce or fresh herbs if desired.
