Instructions
- Prepare the Cake:
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
- Make the Caramel Frosting:
- In a saucepan over medium heat, melt the butter. Add the brown sugar and bring to a boil. Boil for 2 minutes, stirring constantly.
- Carefully add the cream and return to a boil, continuing to stir for 2 more minutes. Remove from heat and let cool until lukewarm.
- Transfer to a mixing bowl and gradually beat in the powdered sugar and vanilla extract until smooth and creamy.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread a generous amount of caramel frosting over the top.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining caramel frosting.
- Garnish with decorative swirls if desired.
