Description
A delicious Senegalese chicken dish marinated in lemon juice and sautéed onions.
Ingredients
Scale
- 2 lbs bone-in chicken thighs
- 3 large onions, sliced
- 1/4 cup olive oil (divided)
- 1/4 cup lemon juice
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 bay leaf
- 1 teaspoon cayenne pepper (optional, adjust to taste)
- 1 teaspoon black pepper
- 1 teaspoon salt
Instructions
- Marinate the Chicken: Begin by combining the lemon juice, mustard, garlic, ginger, apple cider vinegar, salt, black pepper, and cayenne in a large bowl. Stir well until it forms a thick marinade. Add the chicken pieces and coat them thoroughly. Cover and refrigerate for at least 4 hours, but ideally overnight.
- Sauté the Onions: In a large skillet or Dutch oven, heat half of the olive oil over medium heat. Add the sliced onions and bay leaf, then cook them slowly until they’re soft and golden brown, about 15–20 minutes. Stir frequently and enjoy the rich, sweet aroma.
- Brown the Chicken: Remove the chicken from the marinade and pat it dry. Heat the remaining olive oil in a separate skillet and brown the chicken on both sides.
- Simmer Everything Together: Return the chicken to the pot with the onions. Pour in the reserved marinade, cover the pot, and let everything simmer on low heat for 30–40 minutes.
- Serve and Enjoy: Serve your Poulet Yassa over fluffy white rice or a grain of your choice. Spoon the savory onion sauce over the top, and serve with a slice of lemon on the side.
Notes
