Ingredients

  • 4 cups fresh kale, chopped
  • 2 medium Yukon Gold potatoes, diced (about 2 cups)
  • 2 tbsp high-quality olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 8 oz chorizo or linguica sausage, sliced (or vegetarian substitute)
  • Salt and pepper to taste

Instructions

  1. Prep Ingredients: Wash and chop the kale into bite-sized pieces. Dice the potatoes and onion into uniform cubes. Mince the garlic.
  2. Sauté Aromatics: In a large pot over medium heat, add olive oil. Sauté the onion until translucent (about 5 minutes). Add garlic and cook until fragrant.
  3. Add Sausage: Stir in sausage and cook until browned (around 5 minutes).
  4. Add Potatoes & Broth: Mix in diced potatoes and pour in vegetable broth. Bring to a gentle boil, then simmer until potatoes are fork-tender (about 15 minutes).
  5. Add Kale: Fold in chopped kale and simmer for an additional 5-10 minutes until tender but vibrant.
  6. Season: Taste and adjust seasoning with salt and pepper before serving.
