Ingredients

- 4 cups fresh kale, chopped
- 2 medium Yukon Gold potatoes, diced (about 2 cups)
- 2 tbsp high-quality olive oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 6 cups low-sodium vegetable broth
- 8 oz chorizo or linguica sausage, sliced (or vegetarian substitute)
- Salt and pepper to taste
Instructions
- Prep Ingredients: Wash and chop the kale into bite-sized pieces. Dice the potatoes and onion into uniform cubes. Mince the garlic.
- Sauté Aromatics: In a large pot over medium heat, add olive oil. Sauté the onion until translucent (about 5 minutes). Add garlic and cook until fragrant.
- Add Sausage: Stir in sausage and cook until browned (around 5 minutes).
- Add Potatoes & Broth: Mix in diced potatoes and pour in vegetable broth. Bring to a gentle boil, then simmer until potatoes are fork-tender (about 15 minutes).
- Add Kale: Fold in chopped kale and simmer for an additional 5-10 minutes until tender but vibrant.
- Season: Taste and adjust seasoning with salt and pepper before serving.
Notes
- This soup can be made vegetarian by replacing the chorizo with a plant-based sausage.
- Feel free to add other vegetables like carrots or celery for additional flavor.
