Description

This delicious mango chicken stir fry combines tender chicken with fresh vegetables and a sweet mango sauce.


Ingredients

  • 1 pound boneless chicken breasts (cut into bite-sized pieces)
  • 1 cup ripe mango (peeled and diced)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • 1 clove garlic (minced)
  • 1 teaspoon ginger (grated)
  • 1 bell pepper red (sliced)
  • 1 cup snap peas
  • 2 tablespoons fresh cilantro (chopped)
  • 1 lime wedges (for serving)

Instructions

  1. Heat a skillet over medium heat and add the chicken pieces. Cook until browned and cooked through, about 5-7 minutes.
  2. In a blender, combine the diced mango, soy sauce, honey, lime juice, garlic, and ginger. Blend until smooth.
  3. Pour the mango sauce over the cooked chicken in the skillet. Add the sliced bell pepper and snap peas. Stir to combine and cook for an additional 5-7 minutes until the vegetables are tender.
  4. Garnish with chopped cilantro and serve with lime wedges.
