Description
This delicious mango chicken stir fry combines tender chicken with fresh vegetables and a sweet mango sauce.

- 1 pound boneless chicken breasts (cut into bite-sized pieces)
- 1 cup ripe mango (peeled and diced)
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon lime juice
- 1 clove garlic (minced)
- 1 teaspoon ginger (grated)
- 1 bell pepper red (sliced)
- 1 cup snap peas
- 2 tablespoons fresh cilantro (chopped)
- 1 lime wedges (for serving)
Instructions
- Heat a skillet over medium heat and add the chicken pieces. Cook until browned and cooked through, about 5-7 minutes.
- In a blender, combine the diced mango, soy sauce, honey, lime juice, garlic, and ginger. Blend until smooth.
- Pour the mango sauce over the cooked chicken in the skillet. Add the sliced bell pepper and snap peas. Stir to combine and cook for an additional 5-7 minutes until the vegetables are tender.
- Garnish with chopped cilantro and serve with lime wedges.
