Ingredients

  • 1 cup white chocolate melts

Instructions

  1. In a large bowl, combine grated carrots, cream cheese, powdered sugar, cinnamon, and chopped nuts. Mix until smooth.
  2. Cover the bowl and chill the mixture for 1 hour to allow it to firm up.
  3. Scoop tablespoon-sized portions and roll them into balls.
  4. Melt white chocolate in intervals until smooth.
  5. Dip each truffle into melted chocolate, allowing excess to drip off.
  6. Place on parchment paper to set; sprinkle with additional chopped nuts if desired.
