Description
Delicious truffles made with grated carrots and cream cheese, coated in white chocolate.
Ingredients

- 1 cup grated carrots
- 8 oz full-fat cream cheese, softened
- 1 cup powdered sugar
- 1 tsp ground cinnamon
- ½ cup chopped walnuts or pecans
- 1 cup white chocolate melts
Instructions
- In a large bowl, combine grated carrots, cream cheese, powdered sugar, cinnamon, and chopped nuts. Mix until smooth.
- Cover the bowl and chill the mixture for 1 hour to allow it to firm up.
- Scoop tablespoon-sized portions and roll them into balls.
- Melt white chocolate in intervals until smooth.
- Dip each truffle into melted chocolate, allowing excess to drip off.
- Place on parchment paper to set; sprinkle with additional chopped nuts if desired.
Notes
- For a different flavor, try adding vanilla extract or coconut to the mixture.
