  • 1 tablespoon cornstarch
  • 2 tablespoons chicken broth (or water)
  • 1 teaspoon honey (optional, for a hint of sweetness)
  • Salt and black pepper, to taste
  • Chopped green onions and sesame seeds for garnish (optional)

Instructions

  1. Prep the Ingredients: Before you heat up the pan, make sure everything is ready. Spiralize your zucchini using a spiralizer or buy pre-spiralized noodles to save time. Slice the chicken thinly so it cooks quickly and evenly. Mix the soy sauce, cornstarch, chicken broth, and honey in a small bowl to create your sauce base.
  2. Sauté the Chicken: In a large skillet or wok over medium-high heat, add the avocado oil. Once shimmering, add the sliced chicken in a single layer. Season lightly with salt and pepper, and sear until browned and cooked through—about 5–6 minutes. Remove from pan and set aside.
  3. Cook the Vegetables: In the same pan, lower the heat slightly and add sesame oil. Toss in the garlic, stirring constantly so it doesn’t burn. After 30 seconds, add the bell peppers and shredded carrots. Stir-fry for 2–3 minutes until just tender.
  4. Add the Sauce and Chicken Back In: Pour the sauce mixture into the pan with the veggies. It will thicken slightly as it simmers. Stir in the cooked chicken and let everything simmer together for a minute so the flavors can mingle.
  5. Toss in the Zucchini Noodles: Add the spiralized zucchini noodles last. Toss gently with tongs to coat in the sauce and warm them through—about 2 minutes is all they need. You want them tender but not soggy.
  6. Garnish and Serve: Top with sliced green onions and a sprinkle of sesame seeds if you like. Serve immediately and enjoy this fresh, garlicky, and deeply satisfying stir fry.
