- 1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 1 (6 oz) box stuffing mix (like Stove Top)
- 1 (10 oz) can condensed cream of chicken soup
- 1 cup sour cream
- ½ cup milk or chicken broth
- 1 cup frozen mixed vegetables (peas, carrots, corn, green beans), thawed
- 1 cup shredded cheddar cheese, divided
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Season the chicken pieces with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes, until lightly browned on all sides (it will finish cooking in the oven). Transfer the chicken to the prepared baking dish.
- In a medium bowl, prepare the stuffing mix according to the package directions (usually involving boiling water and butter). Set aside.
- In another bowl, whisk together the cream of chicken soup, sour cream, and milk (or broth) until smooth. Stir in the thawed mixed vegetables and ½ cup of the shredded cheddar cheese.
- Pour the soup and vegetable mixture evenly over the chicken in the baking dish.
- Spoon the prepared stuffing mix over the top, spreading it into an even layer.
- Sprinkle the remaining ½ cup of cheddar cheese over the stuffing.
- Cover the dish loosely with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the casserole is bubbly and the cheese on top is melted and golden.
- Let the casserole rest for 5-10 minutes before serving. Garnish with fresh parsley if desired.

- This casserole can be made ahead of time and refrigerated before baking.
- You can substitute the mixed vegetables with your favorite veggies.
- For extra flavor, consider adding garlic powder or onion powder to the chicken before cooking.
