Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 (6 oz) box stuffing mix (like Stove Top)
  • 1 (10 oz) can condensed cream of chicken soup
  • 1 cup sour cream
  • ½ cup milk or chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans), thawed
  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Season the chicken pieces with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes, until lightly browned on all sides (it will finish cooking in the oven). Transfer the chicken to the prepared baking dish.
  3. In a medium bowl, prepare the stuffing mix according to the package directions (usually involving boiling water and butter). Set aside.
  4. In another bowl, whisk together the cream of chicken soup, sour cream, and milk (or broth) until smooth. Stir in the thawed mixed vegetables and ½ cup of the shredded cheddar cheese.
  5. Pour the soup and vegetable mixture evenly over the chicken in the baking dish.
  6. Spoon the prepared stuffing mix over the top, spreading it into an even layer.
  7. Sprinkle the remaining ½ cup of cheddar cheese over the stuffing.
  8. Cover the dish loosely with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the casserole is bubbly and the cheese on top is melted and golden.
  9. Let the casserole rest for 5-10 minutes before serving. Garnish with fresh parsley if desired.
