Description

A refreshing corn salsa perfect for parties and gatherings.


Ingredients

  • 2 cups sweet corn (fresh or canned, drained)
  • 1 medium red onion (finely chopped)
  • 1 medium red bell pepper (finely chopped)
  • 1 medium jalapeño (seeded and finely chopped)
  • 1/4 cup cilantro (chopped)
  • 1 medium lime (juiced)
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the sweet corn, red onion, red bell pepper, jalapeño, and cilantro.
  2. Squeeze the lime juice over the mixture.
  3. Add chipotle powder, salt, and black pepper to the bowl.
  4. Toss everything together until well combined.
  5. Taste and adjust seasoning if necessary.
  6. Serve immediately or chill in the refrigerator for 30 minutes to enhance flavors.
