Description

Delicious potato muffins loaded with cheese and chives, perfect for any meal.


Ingredients

  • 3 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 2 tablespoons chopped chives
  • 5 teaspoons garlic powder
  • 25 teaspoons salt
  • 25 teaspoons black pepper
  • butter for greasing muffin tin

Instructions

  1. Preheat your oven to 400°F (200°C). Generously grease a 12-cup muffin tin with butter.
  2. In a large bowl, combine mashed potatoes, shredded cheddar cheese, eggs, chives, garlic powder, salt, and pepper.
  3. Mix everything well until the ingredients are fully incorporated.
  4. Spoon the mixture into the prepared muffin cups, dividing evenly among all 12 cups and pressing lightly to compact.
  5. Bake for 25–30 minutes, or until golden brown on top and crisp on the edges.
  6. Allow the puffs to cool for 5 minutes in the tin.
  7. Use a butter knife to gently release and remove the potato puffs from the tin.
  8. Serve warm with sour cream or your favorite dipping sauce.
