- 3 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 2 large eggs
- 2 tablespoons chopped chives
- 5 teaspoons garlic powder
- 25 teaspoons salt
- 25 teaspoons black pepper
- butter for greasing muffin tin
Instructions
- Preheat your oven to 400°F (200°C). Generously grease a 12-cup muffin tin with butter.
- In a large bowl, combine mashed potatoes, shredded cheddar cheese, eggs, chives, garlic powder, salt, and pepper.
- Mix everything well until the ingredients are fully incorporated.
- Spoon the mixture into the prepared muffin cups, dividing evenly among all 12 cups and pressing lightly to compact.
- Bake for 25–30 minutes, or until golden brown on top and crisp on the edges.
- Allow the puffs to cool for 5 minutes in the tin.
- Use a butter knife to gently release and remove the potato puffs from the tin.
- Serve warm with sour cream or your favorite dipping sauce.
