Ingredients

- 1/4 cup finely shredded carrots
- 4 ounces cream cheese (regular or light), softened to room temperature
- 2 Tablespoons honey
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 3 Tablespoons finely chopped walnuts, lightly toasted if desired
- 2 Tablespoons raisins
Instructions
- Using a paper towel or kitchen towel, squeeze the excess moisture from the 1/4 cup finely shredded carrots.
- Combine the 4 ounces cream cheese, 2 Tablespoons honey, 1/2 teaspoon vanilla extract, and 1/2 teaspoon cinnamon in a small bowl.
- Beat with an electric hand mixer on medium speed until smooth and fluffy.
- Stir in the shredded carrots, 3 Tablespoons finely chopped walnuts, and 2 Tablespoons raisins.
- Store in the refrigerator until ready to use.
