Description

A delicious and creamy spread made with carrots, cream cheese, and walnuts.


Ingredients

  • 1/4 cup finely shredded carrots
  • 4 ounces cream cheese (regular or light), softened to room temperature
  • 2 Tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 3 Tablespoons finely chopped walnuts, lightly toasted if desired
  • 2 Tablespoons raisins

Instructions

  1. Using a paper towel or kitchen towel, squeeze the excess moisture from the 1/4 cup finely shredded carrots.
  2. Combine the 4 ounces cream cheese, 2 Tablespoons honey, 1/2 teaspoon vanilla extract, and 1/2 teaspoon cinnamon in a small bowl.
  3. Beat with an electric hand mixer on medium speed until smooth and fluffy.
  4. Stir in the shredded carrots, 3 Tablespoons finely chopped walnuts, and 2 Tablespoons raisins.
  5. Store in the refrigerator until ready to use.
