- 1 cup shredded mozzarella cheese
- 8–10 small taco shells
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 1 packet taco seasoning
- 1 tablespoon olive oil

- to taste Fresh cilantro, chopped (optional, for garnish)

Preheat and Prep:
- Preheat your oven to 375°F (190°C).
- Grease a baking dish with a little olive oil to prevent sticking.

Cook the Filling:
- In a skillet, heat olive oil over medium heat.
- Add diced onion, red bell pepper, and green bell pepper to the skillet. Sauté for about 5 minutes or until they start to soften.
- Add the shredded chicken to the skillet.
- Sprinkle taco seasoning over the mixture and stir well to combine.
- Cook for another 2-3 minutes, ensuring the chicken and veggies are coated with seasoning.

- Place the taco shells in the prepared baking dish, standing upright.
- Fill each shell with the chicken and vegetable mixture.
- Top each taco with a mix of cheddar and mozzarella cheese.

- Bake for 10-15 minutes, or until the cheese is melted and bubbly.
