Description

A warm and hearty baked oatmeal dish featuring apples and walnuts, perfect for breakfast or a cozy snack.


Ingredients

  • 2 cups (180g) old-fashioned rolled oats
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 2 cups (480ml) milk (dairy or almond)
  • 1 large egg
  • 1/3 cup (80ml) maple syrup
  • 2 tbsp (30g) melted coconut oil or butter
  • 2 apples, peeled and chopped (about 2 cups / 240g)
  • 1/2 cup (60g) chopped walnuts or pecans

Instructions

  1. Preheat the oven to 375°F (190°C) and generously grease a 9×13-inch baking dish.
  2. In a large bowl, combine the old-fashioned rolled oats, baking powder, ground cinnamon, sea salt, and half of the chopped walnuts or pecans. Mix well.
  3. In a separate medium bowl, whisk together the milk, large egg, maple syrup, and melted coconut oil or butter until fully combined.
  4. Evenly arrange the peeled and chopped apples in the bottom of the prepared baking dish, spreading them into a single layer.
  5. Sprinkle the dry oat mixture evenly over the apples.
  6. Pour the wet mixture evenly over the oats and apples, making sure all the oats are well soaked.
  7. Sprinkle the remaining chopped walnuts or pecans over the top for added crunch.
  8. Bake for 35–40 minutes, or until the top is golden brown and the oatmeal is set and bubbly. A toothpick inserted into the center should come out mostly clean.
  9. Remove from the oven and let cool for 5–10 minutes before slicing and serving, allowing the bake to set properly.

Notes

  • This dish can be made ahead and stored in the refrigerator for a few days.
  • Feel free to substitute other fruits or nuts as desired.
