Instructions
- Prepare the Strawberry Filling:
- Blend the fresh strawberries in a food processor until smooth. Strain the puree to remove seeds if desired.
- In a saucepan over medium heat, combine the strawberry puree and heavy cream. Stir until the mixture thickens slightly.
- Remove from heat and let it cool to room temperature.
- Make the Cookie Mixture:
- In a large bowl, mix the crushed chocolate sandwich cookies with the softened cream cheese and vanilla extract until well combined.
- Roll the mixture into small balls, each about 1 inch in diameter, and place them on a baking sheet lined with parchment paper. Make an indentation in the center of each ball to hold the strawberry filling later.
- Fill the Truffles:
- Spoon a small amount of the cooled strawberry mixture into the indentation of each cookie ball.
- Reshape the balls carefully, sealing the strawberry filling inside.
- Coat with White Chocolate:
- In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between until smooth.
- Dip each truffle into the melted white chocolate, ensuring it is fully coated. Place back on the parchment paper.
- Decorate:
- Drizzle the dark chocolate over each truffle for an elegant look.
- Sprinkle with pink sprinkles or crushed freeze-dried strawberries before the chocolate sets.
- Chill:
- Allow the truffles to set in the refrigerator for at least 1 hour before serving.
