Description

Delicious homemade white chocolate strawberry truffles that are perfect for any occasion.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled
  • 1 cup white chocolate chips
  • 1/2 cup heavy cream
  • 2 cups chocolate sandwich cookies, crushed
  • 1/2 cup cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 cup dark chocolate, melted (for drizzling)
  • Pink sprinkles or crushed freeze-dried strawberries (for decoration)

Instructions

  1. Prepare the Strawberry Filling:
    • Blend the fresh strawberries in a food processor until smooth. Strain the puree to remove seeds if desired.
    • In a saucepan over medium heat, combine the strawberry puree and heavy cream. Stir until the mixture thickens slightly.
    • Remove from heat and let it cool to room temperature.
  2. Make the Cookie Mixture:
    • In a large bowl, mix the crushed chocolate sandwich cookies with the softened cream cheese and vanilla extract until well combined.
    • Roll the mixture into small balls, each about 1 inch in diameter, and place them on a baking sheet lined with parchment paper. Make an indentation in the center of each ball to hold the strawberry filling later.
  3. Fill the Truffles:
    • Spoon a small amount of the cooled strawberry mixture into the indentation of each cookie ball.
    • Reshape the balls carefully, sealing the strawberry filling inside.
  4. Coat with White Chocolate:
    • In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between until smooth.
    • Dip each truffle into the melted white chocolate, ensuring it is fully coated. Place back on the parchment paper.
  5. Decorate:
    • Drizzle the dark chocolate over each truffle for an elegant look.
    • Sprinkle with pink sprinkles or crushed freeze-dried strawberries before the chocolate sets.
  6. Chill:
    • Allow the truffles to set in the refrigerator for at least 1 hour before serving.

Notes

  • Ensure the strawberries are fresh and ripe for the best flavor.
  • If the cookie mixture is too sticky, chill it for a few minutes before rolling.
  • Adjust the sweetness to your preference by adding a bit of powdered sugar if needed.
  • Use a toothpick or fork to dip the truffles into the white chocolate for easy handling.
