Description

A delicious medley of smoked zucchini, squash, mushrooms, and onions seasoned and cooked to perfection.


Ingredients

Scale
  • 1 package mushrooms (halved)
  • 2 medium zucchini (sliced)
  • 2 medium yellow squash (sliced)
  • 1/2 large onion (diced)
  • 1 tsp garlic salt
  • 3 tbsp butter (sliced)
  • 1 pinch pepper (to taste)
  • 2 tbsp olive oil

Instructions

  1. Preheat smoker to 400 degrees.
  2. Slice zucchini and squash into rounds, mushrooms in half, and dice onion. Put into a bowl.
  3. Pour in olive oil and seasonings. Toss with veggies.
  4. Pour into an aluminum 9×13″ pan and put slices of butter on top. Cover with foil.
  5. When the smoker reaches 400, open and put the tray inside, then move down to 350 degrees F.
  6. Cook for 20-25 minutes (time depends on how tender you like them, 20 min is perfect for us).
