Description
A delicious medley of smoked zucchini, squash, mushrooms, and onions seasoned and cooked to perfection.
Ingredients

- 1 package mushrooms (halved)
- 2 medium zucchini (sliced)
- 2 medium yellow squash (sliced)
- 1/2 large onion (diced)
- 1 tsp garlic salt
- 3 tbsp butter (sliced)
- 1 pinch pepper (to taste)
- 2 tbsp olive oil
Instructions
- Preheat smoker to 400 degrees.
- Slice zucchini and squash into rounds, mushrooms in half, and dice onion. Put into a bowl.
- Pour in olive oil and seasonings. Toss with veggies.
- Pour into an aluminum 9×13″ pan and put slices of butter on top. Cover with foil.
- When the smoker reaches 400, open and put the tray inside, then move down to 350 degrees F.
- Cook for 20-25 minutes (time depends on how tender you like them, 20 min is perfect for us).

- Make sure to adjust the cooking time based on your preferred tenderness of the vegetables.
