Description
A delicious and hearty taco cornbread casserole that combines the flavors of tacos with a cornbread topping.
Ingredients

- 1 lb lean ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup sweet corn (fresh or frozen)
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar and Monterey Jack blend)
- 1 cup cornmeal
- 1 cup whole milk
- 2 large eggs
- ½ cup sour cream
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet over medium heat, brown the ground beef until fully cooked.
- Stir in taco seasoning, black beans, and corn; cook for an additional 5 minutes.
- In a bowl, mix cornmeal, milk, eggs, and sour cream until smooth.
- Layer half the beef mixture in a greased baking dish, sprinkle with cheese, top with remaining beef mixture, and pour cornbread batter over it.
- Bake for 25-30 minutes until golden brown.
- Let cool slightly before serving.
Notes
- This dish can be served with sour cream or salsa on the side.
- You can use frozen corn if fresh corn is not available.
