This Strawberry Fluff Gelatin Dessert is a deliciously fruity and fluffy treat perfect for any occasion!
Ingredients
Scale
- 1 package (6 oz) strawberry gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 can (20 oz) crushed pineapple, drained
- 2 cups mini marshmallows
- 1 package (8 oz) cream cheese, softened
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries (optional, for garnish)
- Mint leaves (optional, for garnish)
Instructions
- Dissolve Gelatin: In a large bowl, dissolve the strawberry gelatin in 1 cup of boiling water. Stir in 1 cup of cold water and refrigerate until it begins to set, about 1 hour.
- Prepare Cream Mixture: In a separate bowl, beat the softened cream cheese until smooth. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Combine Ingredients: Fold the whipped cream mixture into the cream cheese until well combined. Add the partially set gelatin, drained crushed pineapple, and mini marshmallows. Mix gently until everything is evenly distributed.
- Mold and Chill: Pour the mixture into a gelatin mold or a large serving dish. Cover and refrigerate for at least 4 hours or until firmly set.
- Serve: Once set, gently unmold the dessert onto a serving plate. Garnish with fresh strawberries and mint leaves if desired.
Notes
- Ensure the cream cheese is well-softened to achieve a smooth mixture.
- For an extra fruity flair, consider adding diced fresh strawberries to the gelatin mixture.
- To unmold easily, dip the mold in warm water for a few seconds before inverting onto a plate.
- Consider using a rubber spatula for folding in the whipped cream to maintain its fluffiness.
