A hearty and delicious dish combining ground beef, beans, and cornbread.

- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes, drained
- 1 packet taco seasoning
- 1 1/2 cups shredded cheddar cheese
- 2 boxes (8.5 oz each) cornbread mix
- 2/3 cup milk
- 2 eggs
- 1 small onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Cook the Beef Mixture: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until onion is translucent. Add ground beef; cook until browned. Drain excess fat. Stir in taco seasoning, black beans, corn, and diced tomatoes. Cook for another 5 minutes. Season with salt and pepper.
- Prepare Cornbread Mixture: In a large bowl, combine cornbread mix, milk, and eggs. Stir until well combined.
- Assemble the Casserole: In a greased baking dish, pour half of the cornbread mixture to cover the bottom. Layer the beef mixture over the cornbread. Sprinkle shredded cheddar cheese evenly over the beef mixture. Pour the remaining cornbread mixture on top, spreading it to cover completely.
- Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Notes
- Ensure the beef is completely cooked before layering.
- You can add jalapeños or green chilies for an extra kick.
- Substitute ground turkey or chicken for a lighter version.
- Use freshly grated cheese for better melting and flavor.
- Allow the casserole to cool for a few minutes before slicing to help it set.
