Description

A delicious and healthy salmon vegetable soup that is easy to make.


Ingredients

  • 1 lb fresh salmon fillets, skin removed
  • 4 cups vegetable broth
  • 2 medium waxy potatoes, diced
  • 2 medium carrots, sliced
  • 1 large sweet onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp fresh dill or parsley, chopped
  • 1 tbsp lemon juice
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the diced onions until translucent (about 5 minutes).
  2. Add minced garlic and stir for an additional minute until fragrant.
  3. Incorporate diced potatoes and carrots; pour in vegetable broth. Bring to a gentle boil, stirring occasionally until vegetables are tender (approximately 15 minutes).
  4. Gently add chopped salmon fillets into the pot. Simmer on low heat for about 10 minutes or until the fish flakes easily with a fork.
  5. Stir in freshly chopped dill or parsley along with lemon juice just before serving.
  6. Ladle into bowls and garnish with extra herbs if desired.

Notes

  • This soup can be made with other types of fish or vegetables as desired.
  • For a creamier texture, add a splash of cream before serving.
