Description

Delicious roasted sweet potatoes seasoned simply with olive oil and spices.


Ingredients

  • 2 pounds sweet potatoes (about 4 medium)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • Fresh ground black pepper, to taste

Instructions

  1. Preheat oven to 450°F.
  2. Dice the sweet potatoes into 3/4” cubes, leaving the skins on.
  3. In a large bowl, mix sweet potatoes with olive oil, garlic powder, pepper, and salt.
  4. Place the sweet potatoes on a baking sheet lined with parchment paper in a single layer.
  5. Bake for about 25 minutes until the cubes are fork-tender and browned on the bottom. Serve warm.
  6. Leftovers store up to 5 days refrigerated.
