- 1 cup raspberry jam
- 2 cups heavy cream

Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- Prepare the Cake Batter: In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in the vanilla and coconut extracts. In another bowl, combine flour, baking powder, and salt. Gradually add to the butter mixture alternating with coconut milk, beginning and ending with the flour mixture. Mix until just combined. Fold in the shredded coconut and raspberries gently.
- Bake the Cake: Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- Prepare the Whipped Cream: In a medium bowl, beat the heavy cream, powdered sugar, and coconut extract until stiff peaks form.
- Assemble the Cake: Place one cake layer on a serving platter. Spread half of the raspberry jam over the top. Spread a layer of whipped cream over the raspberry jam. Place the second cake layer on top and repeat with the remaining raspberry jam and whipped cream. Garnish with fresh raspberries and a sprinkle of shredded coconut.
- Chill: Refrigerate the cake for at least an hour before serving to allow the flavors to meld.
