Instructions
- Prepare the Cake Batter:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in the vanilla extract and cocoa powder. Stir until well blended.
- Gradually add flour to the mixture, alternating with buttermilk, beginning and ending with flour. Mix until just combined.
- Add pink food coloring and mix until the desired shade is achieved.
- In a small bowl, combine baking soda and vinegar; gently fold into the batter.
- Bake the Cake:
- Divide batter evenly between prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool in pans for 10 minutes, then turn onto wire racks to cool completely.
- Prepare Strawberry Filling:
- Mix the pureed strawberries into the cream cheese.
- Add in ½ cup of softened butter and blend until smooth.
- Gradually add powdered sugar and vanilla extract, mixing well until creamy.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread a generous layer of strawberry cream cheese filling on top.
- Place the second cake layer on top and spread filling on the surface and sides of the cake.
- Decorate with pink sprinkles.
