Instructions

  1. Prepare the Cake Batter:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a large bowl, cream together the butter and granulated sugar until light and fluffy.
    • Add eggs one at a time, mixing well after each addition.
    • Mix in the vanilla extract and cocoa powder. Stir until well blended.
    • Gradually add flour to the mixture, alternating with buttermilk, beginning and ending with flour. Mix until just combined.
    • Add pink food coloring and mix until the desired shade is achieved.
    • In a small bowl, combine baking soda and vinegar; gently fold into the batter.
  2. Bake the Cake:
    • Divide batter evenly between prepared pans.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow cakes to cool in pans for 10 minutes, then turn onto wire racks to cool completely.
  3. Prepare Strawberry Filling:
    • Mix the pureed strawberries into the cream cheese.
    • Add in ½ cup of softened butter and blend until smooth.
    • Gradually add powdered sugar and vanilla extract, mixing well until creamy.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a generous layer of strawberry cream cheese filling on top.
    • Place the second cake layer on top and spread filling on the surface and sides of the cake.
    • Decorate with pink sprinkles.
