Ingredients

  • 4 large russet potatoes
  • 2 cups pulled pork
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup cooked and crumbled bacon

Instructions

  1. Prepare the Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Scrub the potatoes clean and dry them thoroughly.
    • Pierce each potato several times with a fork.
    • Rub the potatoes with olive oil and sprinkle with salt.
    • Place the potatoes directly on the oven rack and bake for 50-60 minutes or until tender.
  2. Prepare the Pulled Pork:
    • If using ready-made pulled pork, heat it up in a saucepan with the BBQ sauce over medium heat.
    • Stir to ensure the pork is well-coated with the sauce. Keep warm.
  3. Assemble the Loaded Potatoes:
    • When the potatoes are done, remove them from the oven and allow to cool slightly.
    • Slice each potato lengthwise and fluff the insides with a fork.
    • Fill each potato with a generous amount of the pulled pork mixture.
    • Top with shredded cheddar cheese, sour cream, chopped green onions, and crumbled bacon.
  4. Serve:
    • Serve immediately while the potatoes are hot.
