Ingredients

  • 1 cup uncooked white or brown rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 large egg
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, rice, onion, garlic, Italian seasoning, salt, pepper, egg, and Parmesan until combined.
  3. Form the mixture into small balls (about 1 inch in diameter) and place on the baking sheet.
  4. Heat olive oil in a skillet over medium heat. Sauté meatballs until browned on all sides (approximately 5 minutes).
  5. Pour tomato sauce over the meatballs; bring to simmer and cook for about 20 minutes.
  6. Transfer to the oven and bake for an additional 15–20 minutes until fully cooked.
