Description

This Red Velvet Biscotti is a festive treat perfect for the holidays or any special occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 tbsp red gel food coloring
  • 1/2 cup chopped nuts (optional, pecans or walnuts)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and a pinch of salt.
  3. In another bowl, beat sugar and eggs until light and fluffy. Mix in vanilla extract and red food coloring.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; add nuts if desired.
  5. Shape dough into two logs (12 inches long, 4 inches wide) on the baking sheet.
  6. Bake for 25-30 minutes until firm but soft in the center.
  7. Cool for 10 minutes before slicing diagonally into 1-inch pieces.
  8. Arrange slices cut-side down on the baking sheet and bake again for an additional 15-20 minutes until crisp.
  9. Let cool completely before serving.
