Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup BBQ sauce (store-bought or homemade)
  • 1 lb pizza dough (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1 medium red onion, thinly sliced
  • ¼ cup fresh cilantro or parsley, chopped
  • 2 tsp olive oil

Instructions

  1. Preheat your grill to medium-high (375°F/190°C) and roll out the pizza dough on a floured surface to about 12 inches in diameter.
  2. Season the chicken breasts with salt and pepper and grill them for 6-7 minutes per side until fully cooked. Let rest before slicing.
  3. Combine BBQ sauce and olive oil in a bowl; mix well.
  4. Spread the BBQ mixture over the rolled-out dough, leaving a half-inch border for the crust. Sprinkle with 1 cup of mozzarella cheese.
