Key Ingredients for Instant Pot Hamburger Soup with Cauliflower

Ground Beef: The star of our Instant Pot Hamburger Soup is the ground beef. I recommend using lean ground beef to keep the soup hearty yet health-conscious. Browning the beef before pressure cooking enhances the flavor and creates a delicious foundation for the entire dish.

Cauliflower: This recipe beautifully incorporates cauliflower, adding a nutritious twist and a fantastic texture. I love using fresh cauliflower for its crunch. Frozen works too, just adjust cooking times for tender results.

Vegetables: Chopped carrots, celery, and onions add a delightful sweetness and depth. They cook down perfectly in the Instant Pot, ensuring you get a mouthful of flavor in every bite.

Broth: Use beef or vegetable broth as the base. It infuses the soup with savory richness. Homemade is great, but store-bought works perfectly in a pinch.

Seasonings: A blend of garlic, thyme, and bay leaves rounds out the soup, delivering aromatic goodness that will make your kitchen smell divine.

Cooking Tips and Notes for Instant Pot Hamburger Soup

Creating a delicious batch of Instant Pot Hamburger Soup is more than just throwing ingredients together—it’s an opportunity to weave flavors and textures into a hearty and satisfying meal.

Choosing Your Protein:
When it comes to the ground beef for your soup, opting for lean beef (like 90% lean) can reduce greasiness while still giving that classic hamburger taste. You could also explore alternatives like turkey or chicken if you’re looking to keep things lighter.

Vegetable Variety:
Feel free to get creative with your vegetables! While the recipe calls for cauliflower, adding in frozen peas, corn, or even diced zucchini can enhance both the flavor and nutritional value of your soup.

Perfect Seasoning:
Spices are key in the Instant Pot Hamburger Soup. A dash of smoked paprika or even a sprinkle of your favorite hot sauce during cooking can elevate the dish. Remember to taste as you go; add salt gradually to avoid overpowering the natural flavors of your ingredients.

Cooking Time and Consistency:
If you’re short on time, don’t sweat it! The Instant Pot reduces cooking time drastically. Moreover, if you prefer a thicker soup, you can blend a portion of the soup after it’s cooked, then stir it back in for an inviting consistency.

Using these tips will help you craft a flavorful Instant Pot Hamburger Soup that’s perfect for any weeknight dinner!

Description

A hearty and delicious Instant Pot Hamburger Soup perfect for a cozy meal!

Ingredients

Scale
  • 1 T olive oil (plus a little more if needed)
  • 1 lb. ground beef
  • 1 medium onion, chopped small
  • 1 cup chopped celery
  • 2 T minced garlic (minced garlic from a jar is fine for this)
  • 1 tsp. kosher salt
  • fresh-ground black pepper to taste
  • 2 T dried parsley
  • 2 tsp. dried thyme
  • 1 tsp. onion powder
  • 2 T Worcestershire Sauce (see notes for gluten-free)
  • 3 cans (14 oz. size) beef broth
  • 1 can (14 oz. size) vegetable broth
  • 3 cups frozen cauliflower rice (divided)
  • 2 T balsamic vinegar (or other flavorful vinegar of your choice)

Instructions

  1. Chop one cup each of onion and celery and measure out 2 tablespoons minced garlic (or chop fresh garlic if you prefer).
  2. Heat 1 tablespoon olive oil in the Instant Pot on SAUTE, HIGH HEAT, add the ground beef and cook until it’s nicely browned, breaking apart with a plastic or wooden turner as it cooks. (Don’t use a metal turner, which might scratch the pot.)
  3. Season the browned meat with salt and fresh ground black pepper, push it over to the side, add another teaspoon of olive oil if needed, and add the chopped onion and celery. Cook 3-4 minutes, then add the minced garlic and cook a minute or two more. Mix the barely-cooked onion/celery mixture into the ground beef.
  4. Add dried parsley, dried thyme, onion powder, Worcestershire Sauce, beef broth, vegetable broth, and 1 cup frozen cauliflower rice to the pot. Lock the lid and set the Instant Pot to MANUAL, HIGH PRESSURE, 10 minutes. After cooking time is up, let the pot natural release (or natural release 10 minutes and then release the rest of the pressure if you want it to go a bit faster).
  5. Turn the IP settings back to SAUTE, MEDIUM HEAT, add two more cups cauliflower rice and let the soup simmer until the newly-added cauliflower rice is cooked, about 10-12 minutes. (By now the first cauliflower rice you added will be mostly dissolved, thickening the soup.)
  6. Stir in 2 T balsamic vinegar (or any flavorful vinegar will work), and taste to see if you want more salt and/or fresh ground black pepper.
  7. Serve Instant Pot Hamburger Soup hot, with freshly-grated Parmesan cheese to add at the table if desired.
