A delicious herb crusted pork loin roast perfect for any occasion.
Ingredients
Scale
- 3 pounds pork loin roast
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon zest
- 1 teaspoon onion powder
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Pork Loin: Pat the pork loin dry with paper towels. Rub the pork loin with olive oil, then season liberally with salt and pepper.
- Make the Herb Mixture: In a small bowl, combine the minced garlic, rosemary, thyme, Dijon mustard, lemon zest, and onion powder.
- Crust the Pork Loin: Rub the herb mixture evenly over the entire surface of the pork loin, pressing gently to adhere.
- Roast the Pork Loin: Place the pork loin on a roasting rack in a baking dish. Roast in the preheated oven for about 1 hour to 1 hour and 20 minutes, or until the internal temperature reaches 145°F (63°C).
- Rest and Serve: Remove the pork loin from the oven and let it rest for at least 10 minutes before slicing. Slice and serve.
Notes
- Herb Variations: Feel free to substitute herbs with your favorites such as sage or oregano based on your preference.
- Resting Time: Allowing the meat to rest ensures that the juices redistribute throughout the roast, making it more tender.
- Check Temperature: Always use a meat thermometer to ensure the pork is cooked to the proper temperature for safety and best texture.
- Serve with Sauce: A light apple sauce or a balsamic glaze can complement the herbs and enhance the flavor.
