Description

A delicious and hearty breakfast casserole loaded with breakfast sausage, eggs, cheese, and colorful bell peppers.


Ingredients

  • 1 pound breakfast sausage
  • 8 large eggs
  • 2 cups shredded cheese (cheddar and mozzarella blend)
  • 1 cup diced bell peppers (mix of colors)
  • 1 medium sweet onion, diced
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano or thyme

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the breakfast sausage until browned. Add diced onion and bell peppers; sauté until soft.
  3. In a mixing bowl, whisk together eggs, milk, salt, pepper, and herbs until well combined.
  4. Spread the cooked sausage mixture evenly in the prepared baking dish. Pour the egg mixture over it.
  5. Sprinkle shredded cheese generously on top.
  6. Bake for 30-35 minutes or until puffed up and golden brown. Allow to cool slightly before serving.
