- 1 pound breakfast sausage
- 8 large eggs
- 2 cups shredded cheese (cheddar and mozzarella blend)
- 1 cup diced bell peppers (mix of colors)
- 1 medium sweet onion, diced
- 1 cup whole milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano or thyme
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large skillet over medium heat, cook the breakfast sausage until browned. Add diced onion and bell peppers; sauté until soft.
- In a mixing bowl, whisk together eggs, milk, salt, pepper, and herbs until well combined.
- Spread the cooked sausage mixture evenly in the prepared baking dish. Pour the egg mixture over it.
- Sprinkle shredded cheese generously on top.
- Bake for 30-35 minutes or until puffed up and golden brown. Allow to cool slightly before serving.
Notes
- This casserole can be prepared ahead of time and baked the next morning.
