Description

Delicious and healthy chocolate protein brownies made with cottage cheese and protein powder.


Ingredients

  • 1 cup cottage cheese (blended smooth)
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1/4 cup melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup oat flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup chocolate protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  2. Blend cottage cheese until completely smooth.
  3. In a mixing bowl, whisk cottage cheese, eggs, maple syrup, melted oil, and vanilla until smooth.
  4. In a separate bowl, whisk oat flour, cocoa powder, protein powder, baking powder, and salt.
  5. Combine dry ingredients into the wet mixture and stir until just mixed.
  6. Fold in chocolate chips and nuts (if using).
  7. Pour batter into the prepared pan and top with extra chocolate chips.
  8. Bake for 22–26 minutes until edges are set and the center is still moist.
  9. Cool completely before slicing. For best texture, refrigerate 30 minutes before serving.

Notes

  • For a healthier option, use unsweetened applesauce instead of maple syrup or honey.
