Delicious and healthy chocolate protein brownies made with cottage cheese and protein powder.
Ingredients

- 1 cup cottage cheese (blended smooth)
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1/4 cup melted coconut oil or unsalted butter
- 1 teaspoon vanilla extract
- 1/2 cup oat flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup chocolate protein powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup dark chocolate chips
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
- Blend cottage cheese until completely smooth.
- In a mixing bowl, whisk cottage cheese, eggs, maple syrup, melted oil, and vanilla until smooth.
- In a separate bowl, whisk oat flour, cocoa powder, protein powder, baking powder, and salt.
- Combine dry ingredients into the wet mixture and stir until just mixed.
- Fold in chocolate chips and nuts (if using).
- Pour batter into the prepared pan and top with extra chocolate chips.
- Bake for 22–26 minutes until edges are set and the center is still moist.
- Cool completely before slicing. For best texture, refrigerate 30 minutes before serving.
Notes
- For a healthier option, use unsweetened applesauce instead of maple syrup or honey.
- Store leftovers in an airtight container in the refrigerator.
