Description

Delicious chocolate cupcakes perfect for festive occasions, topped with smooth frosting and festive sprinkles.


Ingredients

  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (55g) cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (120ml) buttermilk
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) boiling water
  • 1 cup (230g) unsalted butter (for frosting)
  • 4 cups (480g) powdered sugar (for frosting)
  • 1/4 cup (60ml) heavy cream (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Red and green sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with festive cupcake liners.
  2. In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, combine buttermilk, vegetable oil, eggs, and vanilla extract. Mix well.
  4. Slowly add the wet ingredients to the dry ingredients, mixing until the batter is smooth.
  5. Gradually stir in the boiling water. The batter will be thin, which is normal.
  6. Pour the batter into the cupcake liners, filling each about two-thirds full.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before frosting.
  9. In a large bowl, beat the butter on high speed until creamy. Add the powdered sugar and mix on low speed until incorporated, then on high. Add the heavy cream and vanilla extract and beat until fluffy.
  10. Pipe the frosting onto cooled cupcakes with a piping bag and star tip. Top with red and green sprinkles for a festive touch.

  • Ensure that ingredients like eggs and buttermilk are at room temperature for even mixing.
  • If the frosting is too thick, add a bit more cream. If it’s too thin, add more powdered sugar.
  • Store cupcakes in an airtight container at room temperature for up to 3 days. If stored in the fridge, allow them to come to room temperature before serving for the best taste.
