Description

A quick and easy fried rice recipe using leftover rice, perfect for a hearty meal.


Ingredients

  • 2 cups cooked cold rice
  • 2 eggs
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Chop green onions, mince garlic, and crack eggs into a bowl. Prepare rice by breaking up any clumps.
  2. Heat 1 tablespoon of oil in a large pan or wok. Scramble the eggs gently until just set, then remove from the pan.
  3. Add more oil if needed. Sauté garlic and white parts of green onions until fragrant.
  4. Add cold rice to the pan. Stir-fry to heat through and break up clumps.
  5. Season with soy sauce, salt, and pepper. Stir to coat the rice evenly.
  6. Return scrambled eggs to the pan and mix in. Add green parts of the onions and stir to combine.

Notes

  • For best results, use day-old rice as it is dryer and easier to stir-fry.
  • You can add vegetables like peas and carrots for additional flavor and nutrition.
