Description

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole milk (room temperature)
  • 3 large eggs (room temperature)
  • 1/2 teaspoon salt
  • 1 tablespoon unsalted butter, melted (plus extra for greasing the tin)
  • 1/4 cup grated cheese (optional)
  • fresh herbs like chopped chives or thyme (optional)

Instructions

  1. Place your muffin tin in the oven and preheat to 450°F (232°C).
  2. In a blender, combine eggs, milk, flour, salt, and melted butter. Blend until smooth and frothy, then let rest for 10–15 minutes.
  3. Remove the hot muffin tin from the oven and generously grease each cup with butter.
  4. Pour batter into the muffin cups, filling 2/3 to 3/4 full. Add cheese or herbs if using.
  5. Bake at 450°F (232°C) for 20 minutes, then reduce heat to 350°F (175°C) and bake for 10–15 more minutes. Do not open the oven door.
  6. Once golden and puffed, remove from oven. Gently release with a knife and serve immediately.
