Ingredients

- 1 cup all-purpose flour
- 1 cup whole milk (room temperature)
- 3 large eggs (room temperature)
- 1/2 teaspoon salt
- 1 tablespoon unsalted butter, melted (plus extra for greasing the tin)
- 1/4 cup grated cheese (optional)
- fresh herbs like chopped chives or thyme (optional)
Instructions
- Place your muffin tin in the oven and preheat to 450°F (232°C).
- In a blender, combine eggs, milk, flour, salt, and melted butter. Blend until smooth and frothy, then let rest for 10–15 minutes.
- Remove the hot muffin tin from the oven and generously grease each cup with butter.
- Pour batter into the muffin cups, filling 2/3 to 3/4 full. Add cheese or herbs if using.
- Bake at 450°F (232°C) for 20 minutes, then reduce heat to 350°F (175°C) and bake for 10–15 more minutes. Do not open the oven door.
- Once golden and puffed, remove from oven. Gently release with a knife and serve immediately.
