Description
Delicious mocha chocolate chip pancakes topped with a rich mocha syrup.
Ingredients

- 1½ cups All-purpose flour
- 1⅓ cup Milk (Whole or 2%)
- 2 tbsp Butter (Unsalted)
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1½ tbsp Espresso powder (Good quality)
- 1 tbsp Sugar (Granulated)
- 1 tbsp Brown sugar
- 1 Egg (Large)
- ½ cup Chocolate chips
- ½ cup Coffee (Brewed)
- ¼ cup Cocoa powder
- ¼ cup Sugar (+ 1 tbsp)
- 1 tsp Vanilla extract
- 1 tsp Butter (unsalted)
Instructions
- In a mixing bowl, add milk, egg and butter. Mix thoroughly and keep aside.
- In a separate mixing bowl, whisk together the flour, sugar, baking powder, baking soda and espresso powder.
- Add the dry mixture into the wet mixture and mix until just combined.
- Pour ¼ cup of this mixture on a hot griddle. Toss some chocolate chips on top. When you see bubbles, flip your pancake and cook the other side.
- Add brewed coffee, cocoa powder and sugar in a small saucepan.
- Mix everything on medium heat until the mixture starts to thicken. This usually takes about 10 minutes.
- Remove the saucepan from heat and add butter and vanilla extract. Stir everything together.
- Now, top off your pancakes with some chocolate chips and mocha syrup. Enjoy!
Notes
- For best results, use good quality espresso powder.
- You can adjust the sweetness by adding more or less sugar to the syrup.
