Description

This rich and indulgent chocolate lava cake features a gooey, molten center that will delight any chocolate lover.

Ingredients

Scale
  • 1 cup (200g) high-quality dark chocolate, chopped
  • 1/2 cup (115g) unsalted butter
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (16g) all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Butter and cocoa powder (for greasing and dusting molds)
  • Optional: powdered sugar or fresh berries for serving

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder, ensuring they are well-coated.
  2. Melt Chocolate and Butter: In a microwave-safe bowl or over a double boiler, melt the dark chocolate and butter together, stirring until smooth. Set aside to cool slightly.
  3. Combine Eggs and Sugar: In a separate bowl, whisk the eggs, egg yolks, and granulated sugar together until light and fluffy.
  4. Mix Ingredients: Fold the melted chocolate mixture into the egg mixture carefully. Add the vanilla extract and salt, and gently mix until combined.
  5. Add Flour: Sift the flour over the mixture and fold it in until just combined. Be careful not to overmix.
  6. Pour into Ramekins: Divide the batter evenly among the prepared ramekins.
  7. Bake: Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes. The edges should be firm, but the center will remain soft.
  8. Serve: Allow the cakes to cool for 1 minute before running a knife around the edges to loosen. Invert onto plates and serve immediately, optionally dusted with powdered sugar or topped with fresh berries.

Notes

  • Chocolate Quality: Use the best quality chocolate you can find, as it will significantly impact the flavor of the lava cakes.
  • Testing Doneness: Gently shake the ramekin. The cakes are done when the edges are firm but the center jiggles slightly.
  • Variation: Add a teaspoon of instant espresso powder to the chocolate mixture to enhance the chocolate flavor.
  • Storage: Though best served fresh, any leftover cakes can be kept in the fridge and reheated gently in the oven or microwave.
