Description
This rich and indulgent chocolate lava cake features a gooey, molten center that will delight any chocolate lover.
Ingredients
Scale
- 1 cup (200g) high-quality dark chocolate, chopped
- 1/2 cup (115g) unsalted butter
- 2 large eggs
- 2 large egg yolks
- 1/4 cup (50g) granulated sugar
- 2 tablespoons (16g) all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Butter and cocoa powder (for greasing and dusting molds)
- Optional: powdered sugar or fresh berries for serving
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder, ensuring they are well-coated.
- Melt Chocolate and Butter: In a microwave-safe bowl or over a double boiler, melt the dark chocolate and butter together, stirring until smooth. Set aside to cool slightly.
- Combine Eggs and Sugar: In a separate bowl, whisk the eggs, egg yolks, and granulated sugar together until light and fluffy.
- Mix Ingredients: Fold the melted chocolate mixture into the egg mixture carefully. Add the vanilla extract and salt, and gently mix until combined.
- Add Flour: Sift the flour over the mixture and fold it in until just combined. Be careful not to overmix.
- Pour into Ramekins: Divide the batter evenly among the prepared ramekins.
- Bake: Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes. The edges should be firm, but the center will remain soft.
- Serve: Allow the cakes to cool for 1 minute before running a knife around the edges to loosen. Invert onto plates and serve immediately, optionally dusted with powdered sugar or topped with fresh berries.
Notes
- Chocolate Quality: Use the best quality chocolate you can find, as it will significantly impact the flavor of the lava cakes.
- Testing Doneness: Gently shake the ramekin. The cakes are done when the edges are firm but the center jiggles slightly.
- Variation: Add a teaspoon of instant espresso powder to the chocolate mixture to enhance the chocolate flavor.
- Storage: Though best served fresh, any leftover cakes can be kept in the fridge and reheated gently in the oven or microwave.
