Description
Delicious crispy taquitos filled with cheesy chicken goodness.
Ingredients
Scale
- 2 cups cooked chicken breast, shredded
- 1 cup cheddar cheese, shredded
- 4 oz cream cheese, softened
- 12 corn tortillas
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- for garnish fresh cilantro, chopped
- about 1 cup oil for frying
Instructions
-
Prepare the Filling:
- In a large bowl, mix the shredded chicken, cheddar cheese, and cream cheese. Ensure the cream cheese is well incorporated.
- Add garlic powder, onion powder, cumin, salt, and black pepper. Mix until the ingredients are evenly combined.
-
Assemble the Taquitos:
- Warm the corn tortillas slightly (about 20–30 seconds in the microwave or on a warm pan) to make them pliable.
- Place about 2 tablespoons of the chicken mixture onto each tortilla.
- Tightly roll the tortillas around the filling and secure with a toothpick if necessary.
-
Cooking the Taquitos:
- In a large skillet, heat oil over medium heat.
- Once the oil is hot, carefully place the taquitos seam-side down in the skillet.
- Fry in batches, turning occasionally, until they are golden brown and crispy on all sides (about 3-5 minutes per batch).
- Remove and drain on paper towels.
-
Serve:
- Remove toothpicks, if used. Garnish with chopped cilantro and serve immediately.
Notes
- Ensure tortillas are warm enough to prevent cracking while rolling them up.
- To make a healthier version, consider baking the taquitos in an oven preheated to 400°F (200°C) for about 15-20 minutes until crispy.
- For extra flavor, consider adding a teaspoon of lime juice to the chicken mixture.
- Serve with sour cream, salsa, or guacamole for dipping.
