Instructions

  1. Prepare the Filling:

    • In a large bowl, mix the shredded chicken, cheddar cheese, and cream cheese. Ensure the cream cheese is well incorporated.
    • Add garlic powder, onion powder, cumin, salt, and black pepper. Mix until the ingredients are evenly combined.
  2. Assemble the Taquitos:

    • Warm the corn tortillas slightly (about 20–30 seconds in the microwave or on a warm pan) to make them pliable.
    • Place about 2 tablespoons of the chicken mixture onto each tortilla.
    • Tightly roll the tortillas around the filling and secure with a toothpick if necessary.
  3. Cooking the Taquitos:

    • In a large skillet, heat oil over medium heat.
    • Once the oil is hot, carefully place the taquitos seam-side down in the skillet.
    • Fry in batches, turning occasionally, until they are golden brown and crispy on all sides (about 3-5 minutes per batch).
    • Remove and drain on paper towels.
  4. Serve:

    • Remove toothpicks, if used. Garnish with chopped cilantro and serve immediately.
