- 1 lb (680g) chicken breast cutlets
- 8 oz (225g) mushrooms, sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup (240ml) heavy cream or half-and-half
- 1/2 cup (120ml) chicken broth
- 1 tsp dried thyme
- 1/2 cup (50g) parmesan cheese, grated
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, sear chicken in olive oil until golden; remove and set aside in a baking dish.
- In the same skillet, melt butter and sauté mushrooms and garlic until soft.
- Stir in broth, cream, thyme, and parmesan; simmer until slightly thickened.
- Pour the creamy mushroom sauce over the chicken in the baking dish.
- Bake for 20-25 minutes until bubbly and chicken is cooked through.
- Garnish with parsley and serve.
