- 1 cup (240ml) water
- 1/2 cup (115g) unsalted butter
- 1 cup (125g) all-purpose flour
- 1/2 tsp salt
- 4 large eggs
- 2 cups (480ml) whole milk
- 1/2 cup (100g) granulated sugar
- 1/4 cup (30g) cornstarch
- 4 large egg yolks
- 1 tsp vanilla extract
- 2 tbsp unsalted butter
- 8 oz (227g) semi-sweet chocolate, chopped
- 1 cup (240ml) heavy cream
- Whipped cream or decorative icing
- White chocolate (for drizzling)
Instructions
- Make the Choux Pastry:
- Preheat your oven to 400°F (200°C).
- In a saucepan, combine water, butter, and salt. Bring to a boil.
- Add flour all at once and stir vigorously until the mixture forms a ball.
- Transfer to a mixing bowl and let cool for a few minutes.
- Beat in eggs one at a time until the dough is smooth and glossy.
- Pipe or spoon small mounds onto a baking sheet.
- Bake for 20-25 minutes until golden brown. Let cool.
- Prepare the Pastry Cream:
- In a saucepan, heat milk until it simmers.
- In a separate bowl, whisk together sugar, cornstarch, and egg yolks until smooth.
- Gradually whisk hot milk into the egg mixture.
- Return mixture to saucepan and cook over medium heat, whisking constantly until thickened.
- Remove from heat and stir in vanilla and butter. Let cool.
- Assemble the Cream Puffs:
- Fill cooled puffs with pastry cream using a pastry bag.
- Make the Chocolate Ganache:
- Place chopped chocolate in a bowl.
- Heat cream until just simmering and pour over chocolate.
- Let sit for a few minutes, then stir until smooth.
- Dip and Decorate:
- Dip filled cream puffs into ganache and let set.
- Stack the cream puffs in a pyramid shape on a serving platter.
- Use whipped cream or icing to decorate and stabilize the pyramid.
- Drizzle white chocolate over the tower.
Notes
- Make sure to cool the pastry before filling to prevent the cream from melting.
- You can make the cream puffs and filling a day ahead and assemble before serving.
- For extra flavor, consider adding a pinch of espresso powder to the ganache.
