Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease three 8-inch round cake pans with non-stick spray or butter.
- Mix Batter: In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in eggs, one at a time, mixing well after each addition. Stir in vanilla extract. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture alternately with milk, beginning and ending with flour.
- Bake: Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- Prepare Caramel: In a saucepan over medium heat, melt sugar until it becomes a golden amber color. Carefully stir in butter until melted. Slowly add heavy cream while stirring, as the mixture will bubble vigorously. Add vanilla extract and salt. Let cool slightly.
- Build Layers: Place one cake layer on a serving plate. Spread a layer of caramel sauce over it and sprinkle a portion of chopped pecans. Repeat with the second and third layers, finishing with caramel sauce and more pecans on top.
- Decorate: Arrange whole pecans around the top edge for decoration.
Notes
- Ensure cake layers are completely cool before assembling to prevent the caramel from melting and sliding off.
- For an extra caramel flavor, drizzle additional caramel sauce over the top just before serving.
- Store any leftovers in an airtight container at room temperature or refrigerate for longer freshness.
