Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- Cream Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Prepare Caramel Filling: In a small saucepan, melt the caramel candies with the heavy cream over low heat, stirring constantly until smooth. Let cool slightly.
- Assemble Cookies: Scoop out a tablespoon of dough and flatten it into a disc. Place a small spoonful of caramel in the center, then fold the dough around the caramel to seal. Place on the prepared baking sheet.
- Add Chocolate Toppings: Sprinkle a few chocolate chips or chunks on top of each cookie and gently press them down.
- Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
- Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
