Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Prepare Caramel Filling: In a small saucepan, melt the caramel candies with the heavy cream over low heat, stirring constantly until smooth. Let cool slightly.
  7. Assemble Cookies: Scoop out a tablespoon of dough and flatten it into a disc. Place a small spoonful of caramel in the center, then fold the dough around the caramel to seal. Place on the prepared baking sheet.
  8. Add Chocolate Toppings: Sprinkle a few chocolate chips or chunks on top of each cookie and gently press them down.
