A delicious caramel apple spice cake perfect for any occasion!
Ingredients
Scale
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 1/2 cups granulated sugar
- 1 cup packed light brown sugar
- 1 cup unsalted butter, softened
- 3 large eggs
- 1 tablespoon vanilla extract
- 1 1/2 cups buttermilk
- 3 cups peeled and diced apples
- 1 cup chopped pecans or walnuts (optional)
- Caramel sauce for drizzling
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Cream Butter and Sugars: In a large bowl, beat the granulated sugar, brown sugar, and softened butter until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Combine with Buttermilk and Apples: Alternately add the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Fold in the diced apples and nuts (if using).
- Bake: Divide the batter between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool Cakes: Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- Frosting (Optional): Prepare your choice of frosting (e.g., cream cheese frosting) and frost the cake once it’s cool.
- Drizzle Caramel: Drizzle caramel sauce over the top of the cake for added flavor and decoration.
Notes
- Use slightly tart apples like Granny Smith for the best flavor contrast.
- Ensure that the cake layers are completely cool before frosting to prevent the frosting from melting.
- For extra caramel flavor, consider adding a layer of caramel sauce between the cake layers.
- Toast the nuts before adding them to the batter for an added depth of flavor.
