- 1 cup creamy almond or peanut butter
- 1 cup rolled oats
- ½ cup protein powder (vanilla or cheesecake flavor)
- ½ cup blueberry jam or preserves
- 8 oz cream cheese, softened
- ¼ cup honey or maple syrup
- ½ teaspoon vanilla extract
- 1 cup fresh or freeze-dried blueberries
- Pinch of salt
Instructions
- In a large bowl, combine almond butter, rolled oats, protein powder, honey, and vanilla extract. Stir until fully combined and smooth.
- Mix in the softened cream cheese until it is well incorporated into the base.
- Gently fold in the blueberry jam or preserves, followed by fresh or freeze-dried blueberries. Be careful not to overmix to keep the blueberries intact.
- Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls. Aim for about 1 inch in diameter for each bite.
- Place the rolled bites on a parchment-lined baking sheet and refrigerate for 30 minutes to 1 hour, allowing them to firm up.
- Once chilled, your Blueberry Cheesecake Protein Bites are ready to be enjoyed or stored!
