Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan to prevent sticking.
  2. Prepare Batter:
    • In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
    • Add eggs one at a time, beating well after each addition.
    • Mix in the vanilla extract and lemon zest.
  3. Combine Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined.
  5. Pour and Bake:
    • Pour the batter evenly into the prepared Bundt pan.
    • Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and Garnish:
    • Allow the cake to cool in the pan for about 10 minutes. Then invert it onto a wire rack to cool completely.
    • Once cool, place the cake on a serving plate and top with mixed berries.
    • Garnish with fresh mint leaves if desired.
